Chettinad Chicken Kuzhambhu


Wash and cut Chicken into small pieces - 3/4Kg.

Onion paste: Cut and Grind onions [2-3 medium sized ones].

Coconut milk: Grind coconut pieces [4-5tbs] in the mixer jar with fennel seeds [1/2tsp], cardamom [1] and a cup of warm water. Strain the milk and keep it aside.

KUZHAMBHU:

Heat oil [3tbs] in a pressure cooker. Fry *whole garam spices for a minute.
Add green chillies [1], onion paste and fry till turns dry and light brown color. Add ginger-garlic paste [1tbs], chicken pieces and salt. Fry for 2-3minutes till water from chicken separates. Add coconut milk [1 big cup]. Simmer for 3-4minutes. 


Then add turmeric powder [1/2tsp], chilli powder [1tsp], coriander powder [1tsp], garam masala [1/2tsp] and sliced tomatoes [1]. NO WATER must be added. Let the chicken pieces cook in coconut milk. Pressure cook for 10minutes - 2whistles. 


Garnish with cilantro leaves and once again heat to thicken the kuzhambhu. 


*Whole garam spices - Cloves [3], cinnamon stick [1], cardamom [1] and fennel seeds [1/2tsp]
