Palak Paneer


THINGS TO DO:


Chop onions [2]
Wash and cut Palak leaves [1 bowl]
Fry Paneer cubes [1cup] in butter [1tbs] separately till it turns light brown in color.

TO GRIND:

Boil Tomatoes [3 small ones] till the skin peels off. Then grind it to paste.

Heat Butter [1tbs] in a pan. Fry green chillies [2], garlic pods [2], ginger [1 inch piece] for a minute and add half of the chopped onions. Saute till it turns pink. Now add the Palak leaves, little salt and a glass of water. Let it cook for 6-8minutes. Grind this mixture along with the tomato paste and curd [1-2tbs] to fine paste.

GRAVY:


Now heat oil [You can use butter again] - 1tbs
Fry fennel seeds [1tsp] and the remaining half of the chopped onions for a minute.
Add the ground paste, salt, chilli powder [1tsp], coriander powder [1tsp], cumin powder [1/4tsp], garam masala powder [1/2tsp] and a cup of water. Simmer for 5-7minutes. Throw in the Paneer cubes.

Garnish with a spoon of fresh cream :)
You can also add cashew paste to get the rich taste.
