Schezwan Chicken Noodles




THINGS TO DO:

  • Chop carrot [1], beans [4-5] and capsicum [1/2] to tiny pieces - Total veggies [1cup] 
  • Prepare Chicken stock [I use Maggi Chicken stock] - 2cups
  • Cook noodles. Strain the liquid and mix oil [1tbs] to the noodles. Toss the noodles such that it does not stick together. 
  • Boil Chicken pieces [1/2 cup] in one cup of water with cloves [3-4], cinnamon stick [1], pepper powder [1/2tsp] and little salt for 15minutes. Strain the liquid. Slice the cooked chicken pieces to thin threads. 
  • Beat eggs [2]. Add a pinch of pepper powder and a pinch of salt. Heat oil [1/2tsp] in a pan and scramble the egg mixture to thin pieces. 


NOODLES:

Heat oil [1tbs] in a pan.
Fry sliced onions [1] and ginger garlic paste [1/2tsp] for a minute.
Add chopped veggies [1cup] with salt. Add salt sufficient enough to coat the noodles.
Add chicken pieces and pepper powder [1tsp].
Add soya sauce [1tbs], schezwan sauce [4tsp] and chicken stock [2cups].
Cook for some time till water reduces.

Finally add cooked noodles and toss it.
Garnish with egg pieces.

Serve Hot with tomato-garlic sauce and Manchurian :)
