Mushroom Gravy - Karaikudi style



I learnt to make Karaikudi Chicken masala from Chef Dhamu's recipes. It tastes great !
I tried the same recipe with Mushrooms and it came out well.
I slightly modified the recipe and
here I present the vegetarian version of the recipe:

ROAST:

Red chillies [2 long ones]
Cumin seeds [1/2tsp]
Pepper corns [1/2tsp]
Fennel seeds [1tsp]
Cinnamon stick [1/2 a piece]
Cloves [2]
Cardamom [1]
Curry leaves [5-6 leaves]
Grated coconut [3-4tbs]
Coriander powder [1tsp]

Roast till the coconut turns light brown in color and powdery.
Grind with sufficient water to paste.

GRAVY:

Heat oil [2tbs] in a pan.
Fry chopped onions [1 big one], chopped green chillies [1tsp] till the onions are cooked.
Add ginger garlic paste [1tsp] and chopped tomatoes [1]. Fry till oil oozes out.
Then add mushroom pieces [200grams: cut into slices], turmeric powder [1/2tsp] and chicken masala powder [1tsp]. Fry for 2-3minutes. Add a cup of water and the ground paste.
Simmer for 5-6minutes till the gravy thickens.

Garnish with cilantro leaves.
Serve hot with Chapathi/Pulao/Dosa.
