Arachu vita Sambar [Side dish for Dosa/Idli]


THINGS TO DO:



  • Prepare Tamarind juice [Gooseberry sized - about 1cup of juice]. Keep it aside.
  • Boil Tuvar dal [less than 1/2cup] with turmeric powder [1/4tsp], little salt and water [1½ cups]. Mash it well.
  • Boil Vegetables [1cup], little salt and water [1/2 - 1cup] separately. Save the water and add it to the Sambar later - This step is optional. 


To GRIND:

Fry the following ingredients in 1tsp of oil and grind it to paste.

  • Bengal gram dal [1 ½ tsp]
  • Red chillies [4]
  • Urad dal [1tsp]
  • Cumin seeds [1/2tsp]
  • Pepper corns [1/2tsp]
  • Fenugreek seeds [pinch]
  • Coconut pieces [1tbs]
  • Coriander powder [2tsp] - Or You can use Coriander seeds
  • Small onions/Shallots [7-8]


SAMBAR:

Heat oil [1tbs] in a pan. Add mustard seeds [1/4tsp], urad dal [1/4tsp], Fennel seeds [1/2tsp], few curry leaves and wait till it crackles.

Add boiled tuvar dal and Sambar powder [1/2tsp]. Then add boiled vegetables and the ground masala. Cook for 2-3minutes.

Add salt, tamarind juice and vegetables boiled water.
Once again cook for 5minutes.
Garnish with coriander leaves and Ghee [optional]

This Sambar goes well with Idli and Dosa.
