Cook Basmati Rice:
Soak Basmati rice [2cups] for 15minutes. Drain the water.
Heat oil [1 ½tbs] in a pressure cooker. Fry *whole garam spices for a minute. Add the soaked rice and fry till water in the rice evaporates.
Then add 3cups of water and salt.
Then add 3cups of water and salt.
Pressure cook for 7-8minutes (or) 2whistles. Make sure the rice is not sticky.
*Whole Garam Spices: Cinnamon [1], bay leaf [1], cloves [3-4] and fennel seeds [1tsp]
For Fried Rice:
Now heat oil [1 ½tbs] in a pan. Fry grated ginger [1tbs], grated garlic [1tbs], finely chopped vegetables - I used carrot , beans and Capsicum – [2cups]. Since salt is already added to the rice, add little salt to cook vegetables. Need not overcook the vegetables – It must be crunchy.
Add soya sauce [1tsp] and green chilli sauce [1tbs]. Then add the cooked rice and pepper powder [1tsp]. Mix it well.
Turn off the heat. Garnish with spring onions.
