Aloo Paratha


Prepare *dough with wheat flour.


Boil Potatoes [3medium sized]
Cool & mash them well.
Mix chopped green chillies [1tsp] and chopped coriander leaves [few]. 
Add little salt as salt is added in the dough mix too. 


Take one 1tbs of this mixture, place it in the centre of the rolled out chapathi. Cover the stuffing by bringing the edges together and once again roll it on the sealed side. 
Heat the tava and make Parathas. 



CHAPATHI DOUGH:

Knead the dough using:
  • wheat flour [4 cups]
  • oil [3tbs], salt and water.

Romali Roti





Heat water [1cup] along with butter [1tbs] till butter melts. 
Then add this water to All purpose flour [2cups]. Add salt.
Knead the dough and roll thin rotis. 
Make it thin to get soft rotis. 
You can make 7-8 small thin rotis.

Ragi Chapathi



Knead the dough using:
  • Wheat flour [1cup]
  • Ragi flour [2/3cup]
  • Oil [2tbs]
  • Salt and water
Roll out small chapathis because one cannot have more than 3-4 small chapathis. 
Heat the tava and make chapathis. Do not add oil. 

Fibre and Calcium rich healthy chapathis are ready !

Palak Chapathi OR Green Chapathi



Boil a bunch of Palak leaves [almost 2 big cups] for 5minutes in a cup of water. In the end after the Palak cooks, add a  small piece of Tamarind [1inch long] to it. Boil for one more minute. 

With the cooked leaves and tamarind, add chopped coriander leaves [1cup], mint leaves [1/2cup], cumin seeds [1/2 tsp], small ginger piece [half an inch], green chillies [2] and little salt. Grind all the above ingredients to paste. 

Add this ground paste to wheat flour [3cups]. Add salt, oil [2tbs] and water. 
knead the dough. 

Roll out chapathi.

Oats Chapathi



Knead the dough using:
  • Wheat flour [3cups]
  • Soya flour [1tbs] (or) you can add soya milk [1/3cup] - OPTIONAL
  • Oats [4tbs]
  • Oil [2tbs]
  • Salt and water
Roll out thin chapathis.
Heat the tava and make chapathis.

Oil-less healthy chapathis are ready !

Cauliflower Paratha


Prepare *dough with wheat flour.

Boil cauliflower florets [1cup] with little salt in one glass of water for 5-6minutes. Enough if it is half-boiled. Dry it and Chop it to tiny pieces.

Heat oil [1tbs] in the pan. Fry grated ginger [1tsp], cumin seeds [1tsp] and chopped onions [1] for some time. Add chopped cauliflower florets, chilli powder [1tsp], garam masala powder [1/2tsp], coriander powder [1tsp] and remaining salt. Fry for 5minutes and turn off the heat. Cool the mixture. Chopped cilantro leaves can also be added. NO WATER must be added.

Take one 1tbs of this mixture, place it in the centre of the rolled out chapathi. Cover the stuffing by bringing the edges together and once again roll it on the sealed side.

Heat the tava and make Parathas. Use ghee.

CHAPATHI DOUGH:

Knead the dough using:
  • wheat flour [4 cups]
  • milk [1/3 cup] - I generally add milk to Chapathi dough. Don't add if you are making Parathas. 
  • oil [3tbs], salt and water
I generally add oil while kneading the dough. I don't use oil while cooking the Paratha. Just trying to be health conscious ! :)
