Serves:

You need:
Rice
– 1cup
Beetroot
– 1cup (Grated)
Shallots
– 15 (or) Onion – 1
Sambar
powder – ½tsp
Salt
– as needed
Water
- 2 cups
Oil
+ Ghee – 1 + 1tbsp
For seasoning:
Mustard
seeds – 1tsp
Urad
dal – 1tsp
Red
chillies – 2
Few
curry leaves
Preparation:
Cook
rice.
Grate
beetroot.
Cooking:
Heat
oil + ghee.
Add
mustard seeds, urad dal, red chillies and curry leaves. Wait until mustard seed
crackles and urad dal turns brown.
Fry
sliced onion.
Add grated beetroot, sambar powder and little
salt. Sauté in low heat for few minutes.
Finally
add cooked rice and salt. Mix well.
Serve
hot with papad.
