Egg Bhurji Masala




Add oil [2tbs] to the pan. Add fennel seeds [1tsp] and cloves [2].
Add chopped garlic [3-4 pods], chopped onion [1 big one], ginger paste [1/2 tsp], chopped green chillies [1], curry leaves and little salt. Sauté for few minutes.

When the onion turns golden brown, add chopped tomato [1], turmeric powder [1/2tsp], chilli powder [1/2 tsp], coriander powder [2 tsp], garam masala [1/2 tsp] and remaining salt. Cook till oil separates.

Then add beaten egg mixture [4eggs] to the above cooked masala. Keep the flame low and scramble it till it comes to a gravy form. Garnish with cilantro leaves.

Goes well with Dosa and Chapathi. Also can be used as a spread in bread.
