Soak Basmati Rice [2cups] for 30minutes.
Take coconut milk - 2 extracts
- First Thick extract - I used coconut pieces [1/2cup] and warm water [2cups]
- Second Thin extract - Same pieces with warm water [1cup]
Heat oil [4tbs] in a pressure pan.
Saute whole garam spices - cloves [4], fennel seeds [1tsp], bay leaves [2] and cardamom [1].
Fry sliced onions [2], slit green chillies [4 long ones] for a minute and ginger garlic paste [1tbs] till the raw smell goes off.
Add finely chopped vegetables [add as per your paste], garam masala powder [1/3tsp] and salt.
Fry for 2minutes and then add soaked rice. Fry for another 2minutes - the rice must be well coated with oil.
Add coconut milk - both the thick and thin extracts [3cups]. Adjust salt.
Pressure cook for 2whistles.
Serve hot with chicken gravy or simple onion raita.
