Malai Kofta


TO MAKE KOFTAS:

Boil Potatoes [1], sliced carrots [1] and Beans [3-4]. Drain and save the water. Mash the vegetables.
Add all purpose flour [2tbs], chilli powder [1/2tsp], coriander powder [1/2tsp], garam masala powder [1/4tsp], cumin powder [1/4tsp], cashew nuts [1tbs] and salt. Mix everything together and make small balls out of it.

Roll the balls in all purpose flour and Deep fry the balls till golden brown in color.

CURRY:

Heat oil [2tbs]. Fry fennel seeds [1/2tsp], cardamom [1], sliced onions [1 big one] till onions turn pink in color. Add ginger [half an inch piece] and garlic pods [5]. Fry for 2minutes.

Then add chopped tomatoes [2 medium sized ones], salt, turmeric powder [1/4tsp], chilli powder [1/2tsp], coriander powder [1/2tsp], garam masala powder [1/4tsp], cumin powder [1/4tsp] and vegetables boiled water. Cook till it becomes dry. Cool the mixture and blend to paste.

Once again heat butter [1tbs] in the same pan. Fry cumin seeds [1/4tsp] for a minute. Add the ground paste and sugar [1/4tsp]. Add little water if needed. Cook for 2-3minutes.

In the end, reduce the flame and add fresh cream [1/2 cup - about 50grams: Depends on your taste]. Simmer for a minute.
Garnish with cilantro leaves.

Serve the curry with Kofta balls !
