Serves:

You need:
Potatoes
– 4
Onion
– 1
Tomatoes
– ½
Kuzhambhu
masala powder – 2tbsp
Salt
– as needed
Olive
Oil – 2tbsp
For seasoning:
Mustard
seeds – 1tsp
Urad
dal – 1tsp
Few
curry leaves
Cooking:
Pressure
cook potatoes for 3whistles.
Heat
oil in a kadai (Use Iron kadai preferably)
Temper
with mustard seeds, urad dal and curry leaves.
Fry
onion. Add kuzhambhu masala powder and salt. Saute for a second – not more than
that to avoid burning the masala powder.
Throw in cooked potatoes. Mix well. Add tomatoes. Maintain medium heat.
Fry
until the potatoes are roasted evenly.
