Vegetable stew



Boil vegetables [carrots, beans, cauliflower, potatoes - 1big cup] with little salt. 
Onion paste: Heat oil [1tbs] in a pan. Fry onions [2 medium sized ones], garlic pods [2-3], ginger [half an inch piece] till onions are cooked. Cool and grind to fine paste by adding little water.
Coconut milk: Grind coconut pieces [4-5tbs] in the mixer jar with cardamom [1] and a cup of warm water. Strain the milk and keep it aside.






Heat oil [1tbs] in the pan. 
Fry fennel seeds [1/2tsp], cloves [3-4] and cinnamon stick [1]. 
Add green chillies [4] and onion paste. Fry for a minute. 
Add the boiled vegetables and salt. Cook for 3-4minutes. 
Finally add coconut milk [1 big cup] and simmer for 3-4minutes in low flame. 
Garnish with cilantro leaves. 


Serve with Aapam/Idiyappam.
