Karaikudi Chicken Drumstick Kuzhambhu



TO ROAST & GRIND:

Dry roast the following ingredients one by one and grind to paste by adding little water.
  • Grated coconut [3-4tbs]
  • Curry leaves [6-7]
  • Peppercorns [1tsp]
  • Cumin seeds [1tsp]
  • Red chillies [4]
  • Coriander powder [1tbs] - add while grinding the masala
  • Cloves - 4
  • Cinnamon stick [half an inch piece]
  • Cardamom - 2
  • Fennel seeds [2tsp]

KUZHAMBHU:
  • Heat oil [2tbs] in a pressure pan.
  • Splutter mustard seeds [1/2tsp]. 
  • Fry shallots [15] for a minute. 
  • Add ginger garlic paste [1tbs]. 
  • Add the chicken drumstick pieces [5 - approx 500grams], turmeric powder [1/2tsp] and salt. 
  • Add chicken masala powder [1tsp] and the ground masala. 
  • Add water [about 1.5cups]. 
  • Pressure cook for 4-5whistles. 
Garnish with chopped cilantro leaves.
