TO ROAST & GRIND:
Dry roast the following ingredients one by one and grind to paste by adding little water.
- Grated coconut [3-4tbs]
- Curry leaves [6-7]
- Peppercorns [1tsp]
- Cumin seeds [1tsp]
- Red chillies [4]
- Coriander powder [1tbs] - add while grinding the masala
- Cloves - 4
- Cinnamon stick [half an inch piece]
- Cardamom - 2
- Fennel seeds [2tsp]
KUZHAMBHU:
- Heat oil [2tbs] in a pressure pan.
- Splutter mustard seeds [1/2tsp].
- Fry shallots [15] for a minute.
- Add ginger garlic paste [1tbs].
- Add the chicken drumstick pieces [5 - approx 500grams], turmeric powder [1/2tsp] and salt.
- Add chicken masala powder [1tsp] and the ground masala.
- Add water [about 1.5cups].
- Pressure cook for 4-5whistles.
